Courgette Cake


I have such a glut of courgettes in my garden (otherwise known as zucchinis). When planting I always remind myself not to plant them all but the seeds are so tiny and I always just throw them in the ground anyway. I forget how much space they take up and how many courgettes each plant produces. Hence the glut.

I've found a new recipe that I'm trying today.




Ingredients

200g butter
200g caster cugar
2 eggs
2 small cougettes
1 apple
200g plain flour
pinch of salt
1/2 tsp baking powder
pinch cinnamon ( I used a lot more)
60g pecans ( I forgot these)
80g sultanas ( I didn't have these)

Method

Preheat oven 180/gas 4.
Grease and line tin.
Cream butter and sugar.
Add beaten eggs.
Grate cougette and apple. Squeeze water out. Add to mix.
Add flour, salt, BP,cinnamon. Fold into mix. 
Add nuts and fruit.
Bake about an hour.


It worked very well. The boys liked it as an afternoon treat and had no idea they were eating a cake made from vegetables. I think I'll tweak it next time though as it was a bit anaemic. I'll use a brown sugar , raisins, and maybe walnuts.
